Ingredients
- 3 cups low or no sodium vegetable stock
- 2 tbsp miso paste
- 2 smashed garlic cloves
- 2-inch piece of ginger root, sliced
- 1–2 whole star anise (optional)
- Fresh cracked pepper to taste
- 1 tsp apple cider vinegar
- 2 daikon radish, sliced into half-inch rounds
- To serve: chopped fresh cilantro, lemon wedges, steamed rice or quinoa
Instructions
- Add the vegetable stock and miso paste to a pot.
- Whisk the miso paste into the stock to break it up a bit, then add the garlic, ginger root, star anise, and pepper.
- Bring the stock to a simmer over medium heat. Let the stock simmer for 5 to 7 minutes, then carefully add the sliced daikon and the apple cider vinegar. Allow the stock to return to a simmer, then cover the pot.
- Allow the daikon to braise in the stock for 20 to 25 minutes or until very tender.
- Serve the daikon over steamed rice or quinoa with a bit of the braising liquid, a sprinkle of fresh chopped cilantro, and a squeeze of lemon if you like.
