Ingredients
For the salad
- 1 bunch tendergreen mustards, sliced into ribbons
- 1/2 of a large apple or pear, thinly sliced or cut into matchsticks<
- 1/3 cup pomegranate arils
- 1/3 cup chopped, toasted pecans
For the dressing
- 4 tbsp Dijon or grainy mustard
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1/2 tsp ground ginger
- Sea salt & pepper to taste
Instructions
- Toss together the tender greens, apple, pomegranate, and pecans in a large bowl.
- In a separate bowl, whisk together the remaining ingredients for the dressing until smooth.
- Taste the dressing and add more salt or pepper if needed.
- Drizzle the dressing over the salad then toss once more to coat everything. Serve immediately as the greens will begin to wilt once dressed.
