Lettuce is always eaten fresh. Because of its high water content (95%), it cannot be frozen or canned.

Description

Crisp, tender and mild green. Typically eaten as a salad, but some of the more dense heads of romaine or fire leaf lettuces can be grilled or used for “wilted” salads.


Storage tips

Keep crisp with humidity and cool. Eat as soon as you can. If you don’t plan on eating immediately then wrap it in a paper towel and store in a plastic bag in your crisper.


Culinary tips
  • A hearty lettuce doesn’t have to be eaten raw.
  • A really quick sauté on super high heat so that the leaves still have crunch is a mastery in itself!
