Corchorus olitorius

Molokhia aka, “Egyptian Spinach,” is the main ingredient in one of Egypt’s most ancient tales. As legend has it, an early Pharaoh had become mysteriously ill and consulted a healer who prescribed a diet of Molokhia in order to be cured. The Pharaoh did so and was miraculously nurtured back to full health. It is believed that from then on the herb has been held in high esteem and is now considered a “national dish” in Egypt today.

Description

Long stems with thin green leaves. Grows well in the Texas summer heat, and is very popular in Northern Africa, India and the Middle East. Not only does it taste delicious, but it is rich in vitamins A and C, and the mineral iron.


Storage tips

Store greens in a plastic bag in your crisper (make sure to remove the twist tie), and they will last around one week.


Culinary tips
  • Does well both cooked and eaten raw.
  • The flavor is rather mild and nutty, and is a great substitution for spinach.
  • The stem is also edible where it is flexible and tender, and when cooked has a nice al dente texture.
