Dandelion Greens
Taraxacum
Dandelion is commonly referred to as a weed, and grows wild around the world. In fact, this green, root and flower are entirely edible, and pound per pound one of the most nutritious greens humans can consume. They have been foraged for centuries around the world as a medicinal plant, and the flower is used to make dandelion tea. The root is commonly roasted and ground, and is called chicory.

Description
Long tiger tooth like shaped green with bold, earthy, nutty and wonderfully bitter flavor.
Storage tips
Store in refrigerator with humidity, and remove twist tie. Store greens in a plastic bag in your crisper, and they will last around one week. You may also blanche and freeze.
Culinary tips
- Dandelions can be a bit strong in flavor, and quite bitter. It’s best to cook with some sort of fat (bacon), acid (citrus), or bold cheese.
- It’s extremely nutrient dense, so it’s also great for smoothies, in salads and juiced.
