The green bean is such apart of the American diet that it has spurred several expression in English that contain the word “bean” like, “full of beans,” and “spill the beans.” Green beans are a legume, which means that they “fix” nitrogen, or capture nitrogen from the air and fix it to the soil.

Description
Tender, firm and flexible, this legume is delicious and is a staple worldwide. When eaten raw they can me mildly toxic, but can still be eaten raw or cooked.
Storage tips
Store in refrigerator with humidity. Better if eaten immediately, but will keep in your fridge for around 1 week.
Culinary tips
- If young, great raw by itself on a crudite platter, or sliced in a salad.
- Not into the boiled flavor of green beans, stir fry on high heat.
- Pickle if running out of time on freshness.
