Molokhia
Corchorus olitorius
Molokhia aka, “Egyptian Spinach,” is the main ingredient in one of Egypt’s most ancient tales. As legend has it, an early Pharaoh had become mysteriously ill and consulted a healer who prescribed a diet of Molokhia in order to be cured. The Pharaoh did so and was miraculously nurtured back to full health. It is believed that from then on the herb has been held in high esteem and is now considered a “national dish” in Egypt today.

Culinary tips
- Does well both cooked and eaten raw.
- The flavor is rather mild and nutty, and is a great substitution for spinach.
- The stem is also edible where it is flexible and tender, and when cooked has a nice al dente texture.
