Kohlrabi Slaw with Sweet Chili Peanut Dressing

Ingredients

For the slaw

  • 2 large kohlrabi, peeled and cut into matchsticks
  • 23 radishes, cut into matchsticks
  • 46 large kohlrabi leaves, thinly sliced
  • 1 tbsp minced fresh cilantro
  • 1/4 cup chopped toasted peanuts (or almonds)
  • 2 tsp fresh lemon juice

For the dressing

  • 1/4 cup peanut butter (or almond butter)
  • 4 tsp rice vinegar
  • 2 tsp sriracha
  • 2 tsp soy sauce, tamari, or coconut aminos
  • 1 tsp maple syrup or honey
  • Sea salt if needed
  • Water as needed to thin

Instructions

  1. Toss the prepped kohlrabi, radishes, kohlrabi greens, cilantro, peanuts, and lemon juice together in a bowl.
  2. In a separate bowl, whisk together the remaining ingredients until a smooth sauce forms. Add water as needed to get a pourable consistency. Season with salt if needed.
  3. When you are ready to eat, pour the sauce over the slaw and toss to combine.
