Ingredients
For the slaw
- 2 large kohlrabi, peeled and cut into matchsticks
- 2–3 radishes, cut into matchsticks
- 4–6 large kohlrabi leaves, thinly sliced
- 1 tbsp minced fresh cilantro
- 1/4 cup chopped toasted peanuts (or almonds)
- 2 tsp fresh lemon juice
For the dressing
- 1/4 cup peanut butter (or almond butter)
- 4 tsp rice vinegar
- 2 tsp sriracha
- 2 tsp soy sauce, tamari, or coconut aminos
- 1 tsp maple syrup or honey
- Sea salt if needed
- Water as needed to thin
Instructions
- Toss the prepped kohlrabi, radishes, kohlrabi greens, cilantro, peanuts, and lemon juice together in a bowl.
- In a separate bowl, whisk together the remaining ingredients until a smooth sauce forms. Add water as needed to get a pourable consistency. Season with salt if needed.
- When you are ready to eat, pour the sauce over the slaw and toss to combine.
