Tendergreen Salad with Maple Dijon Vinaigrette

The leaves of the tendergreen mustard have a mild, peppery flavor and as their name suggests, are perfect for eating raw in salads. They’re high in Vitamins A and C and are a great option to change up your typical salad situation. Try this holiday-inspired salad as a side or top it with your favorite protein for a more complete meal.

Tendergreen Salad with Maple Dijon Vinaigrette

Ingredients

For the salad

  • 1 bunch tendergreen mustards, sliced into ribbons
  • 1/2 of a large apple or pear, thinly sliced or cut into matchsticks<
  • 1/3 cup pomegranate arils
  • 1/3 cup chopped, toasted pecans

For the dressing

  • 4 tbsp Dijon or grainy mustard
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/2 tsp ground ginger
  • Sea salt & pepper to taste

Instructions

  1. Toss together the tender greens, apple, pomegranate, and pecans in a large bowl.
  2. In a separate bowl, whisk together the remaining ingredients for the dressing until smooth.
  3. Taste the dressing and add more salt or pepper if needed.
  4. Drizzle the dressing over the salad then toss once more to coat everything. Serve immediately as the greens will begin to wilt once dressed.
